But no, August was just seven months away! With spontaneity leading the way, Kathryn and her family packed their bags and turned the wedding into a whirlwind European holiday.

Joined by her husband and two sons, Jayden (who celebrated his 14th birthday in Paris!) and Jesse (12), the family explored a stunning lineup of destinations: Dubai, Nice, Monaco, Rome, Paris, London, and the charming Cotswolds. They also reunited with extended family for a few days in Nice to celebrate the big day.

Of all the places visited, Rome stole Kathryn’s heart.

“It was AMAZING – the history was unbelievable,” she shared. And the food? Pizza and pasta in Rome were clear favourites. While not much of a drinker, Kathryn admits that a cold Corona on the wedding day “hit the spot!”

The adventure didn’t stop at sightseeing. In Dubai, the family braved a thrilling dune safari. “At one point I thought I might die,” Kathryn joked, “but it was amazing going from the city and tall buildings to the desert!”

Despite the excitement, Kathryn missed the slower pace of Alexandra and a good New Zealand coffee. Returning to work felt like she’d never left, but the memories of Europe will surely linger.

From spontaneous beginnings to unforgettable moments, Kathryn’s journey reminds us that sometimes the best adventures are the ones we never saw coming.
